Quinoa and Mozzarella Burgers | Recipe

What a busy weekend! Tidying the house, seeing a friend for coffee and a trip to Ikea meant there was no time left for crafting! But I did make some pretty kick-ass veggie burgers! They are so good, filled with delicious melted mozzarella and just as hearty as beef burgers!

Quinoa and mozzarella burgerI make a whole big batch of these each time, shape them into patties, wrap in cling-film and pop them freezer! So, far after a long day a work I let one thaw out while I take a shower, the just chuck it frying pan for few mins . Perfect with some homemade potato wedges or in wrap! Mouth-wateringly good!!

Quinoa and mozzarella burger

I came across a similar recipe by Jessica in the Kitchen which had sun dried tomatoes in and my husband reckons olives would be pretty damn tasty in them too!!

Here’s the recipe:

  1. Finely chopped red onion
  2. 3 crushed gloves of garlic
  3. 3 cups of cooked quinoa
  4. one 125g mozzarella ball
  5. Pinch of salt and pepper
  6. One egg
  7. about 3 tablespoons of flour
  8. olive oil


Firstly, let me apologise for using cup measures, not the usual method in the UK, but it’s so much easier than getting the scales out!

To cook the quinoa, add one cup of quinoa to saucepan and add 2 cups of vegetable stock and simmer for 15 mins on a medium heat, stir occasionally, once all the liquid is absorb is cooked.

Break up the mozzarella into irregular sized pieces.

Add all the ingredients together and mix well, I usually leave the floor until the end, adding it bit by bit until the mixture is able to hold its shape, but still remains quite a gooey mix.

Portion out into burger sized pieces and fry gently in olive oil for 3 mins each side.  And there you have it, enjoy!
