Minestrone Soup | Recipe

Autumn has arrived!

The days are growing shorter and the weather is getting colder, but one thing I love about this season are the sunny autumnal days! These days are perfect for walking in the woodlands around my house and what’s even more perfect is coming home to hot bowl of soup!!

My favourite soup is minestrone, it covers most of the essential nutrients for a vegetarian and it’s really versitile. The staple of minestrone is beans, vegetables and usually pasta or rice, but the type of bean and veg you use is pretty much up to you and is season.

Minestrone soup

Here’s my recipe:

  • 1 red onion
  • 3 garlic cloves
  • 1 yellow pepper
  • 2 large carrots
  • 2 celery sticks
  • large handful of spinach (fresh or frozen)
  • 1 can of chickpeas
  • 1 can chopped tomatoes
  • 3/4 cup of quinoa
  • 1 litre of vegetable stock
  • a good drizzle of olive oil
  • 1tsp dried rosemary
  • 1tsp dried thyme
  • 2tsp parsley
  • salt and pepper

Method:

  • Heat the oil in a large pot. Finely chop the onion and crush the garlic. Gently fry while you finely chop the rest of the veg.
  • Add the rest of the ingredients, bring to the boil and then let it simmer for about an hour.
  • Top off with a bit of grated Parmesan and crusty bread

The perfect way to warm up after a chilly walk!
